Martin Dies Park holds Dutch-oven demonstration

Martin Dies State Park, 11 miles West of Jasper on 190, will have a Dutch-oven demonstration April 12 at noon.

Here are a few recipes that will be included with the demonsration.

Dirty Rice N' More Recipe by Robert Hook • 1/4 cup olive oil • 2 lbs ground beef

• 1 lb pork pan sausage

• 1 1/2 medium onions chopped

• 2 jalapeno peppers chopped

• 4 cans chicken broth

• 1 can mushrooms

• 4 boxes Tony Chachere's Dirty Rice mix

• 2 boxes Tony Chachere's Jambalaya mix

• 2 cans Ranch Style beans (optional)

• 2 Tablespoons chili powder

• 1 Tablespoons cayenne pepper

• 2 cups water

Directions:

Place a full spread of charcoal under a 16" cast iron Dutch Oven. Pour in the olive oil, add meats and onion. Stir frequently until meat is brown. Add jalapeno pepper, cook for about 1/2 minute. Remove all charcoal from under the oven. Place one ring of charcoal around the outer edge of the oven.

Add remainder of ingredients stirring to blend. Cover with lid-put 1 and 1/2 rings of charcoal on lid. Let cook for about 1 hour at 350 degrees stirring occasionally. Add a little more water as needed about half way through cooking time.

Peach Cobbler

Recipe by Arlene Hook

• 1 stick of butter or margarine

• 2 cups Baking Mix (Pioneer or Bisquick)

• 2 cups milk • 2 cups sugar

• Cinnamon

• 2 (29oz cans of sliced peaches)

Directions:

Preheat 12" cast iron Dutch Oven by placing 1 ring of charcoal around the outer edge of the pot with lid on pot place 1 1/2 ring of charcoal on the lid, let it heat for about 5 minutes. Take lid off put in butter to melt.

While butter is melting, mix milk, baking mix, and sugar together until smooth. Pour into melted butter, slowly pour peaches over the mix, juice and all. The dough will rise above the peaches during cooking. Sprinkle with cinnamon, cover and cook about 45 minutes.
